I use a High Definition Camera for all shoots. The image and sound sound quality is second to non. We edit in HD and output to which ever format the client wants. We use various sound gathering equipment to get maximum quality under various conditions. An sound person may also be used to record on separate tape and edited to the visuals in the editing suite.
